Rhys Nicholson has been appointed Head Chef at Sol Rooftop and will be leading the evolution of the highly awarded venue, which has relaunched to cater for all day dining as well as a broad ‘by the glass’ beverage offering.
Rhys has been an integral part of Sol since it opened, working as Sous Chef alongside Kane Pollard, and has made a mark on the team through his wealth of culinary talent and strong leadership skills.
Rhys’ previous appointments include popular Adelaide restaurants Press* Food & Wine, Orso, Osteria Oggi and Shobosho.
Rhys credits Executive Chef Andrew Davies as the person who helped set the foundations of his skill set, training with Andrew before he opened Press* Food & Wine and Osteria Oggi.
Rhys said of the new direction for Sol: “We look forward to offering all occasion dining with a selection of small and large plates, catering to special occasion outings, an afternoon of grazing, or simply dropping in for a glass of wine.
“Each restaurant I’ve worked in over the years has been a little bit different, and I’ve taken knowledge from each venue with me to evolve as a chef, from woodfire grills to Japanese snacks, to Italian fare and Sol’s sustainable fine dining.”
General Manager of Eos by SkyCity hotel and signature restaurants, Jodi Brown, said: “We are thrilled that Rhys will be continuing his journey at SkyCity as we prepare to relaunch Sol Rooftop with an exciting new concept that we believe will be the pulse of Adelaide’s entertainment scene. Sol Rooftop mixologists have worked together with SkyCity’s award winning head sommelier, Jimmy Parham, to present a dynamic list of signature and time honoured cocktails, rare spirits, and one of Adelaide’s broadest ‘by the glass’ international wine lists.
Jimmy said: “We’re excited to be offering a wide-ranging wine list that can be enjoyed indoors or outdoors, whether you’re waiting to check into Eos, gathering with friends, or on the way to Adelaide Oval or the Festival Centre.
“As well as the international offering, there’s naturally a stellar range of all of our favourite South Australian wines too, from Rockford’s Moppa Springs GMS at $15 per glass, to Penfold’s Grange at $220 a glass.”
Sol Rooftop is Adelaide’s elevated all day destination perched atop SkyCity, open from 11am – late every day.
